He is Vighnaharta, the remover of obstacles, so tradition places him at the head of every worship and every new undertaking. This aarti is therefore sung both to open a puja to Ganesha himself and, in many homes, before the aarti of any other deity.
The single tusk - the other was broken, in the best-loved account, when he used it as a stylus to write the Mahabharata as Vyasa dictated. Dayavant means full of compassion, and the verse pairs the two: the god who gave up part of himself out of kindness.
The aarti names them itself - paan, flowers, dry fruit and a bhog of laddu. Durva grass in odd-numbered blades and red flowers are his own offerings; tulsi is the one leaf kept away from him. The list is on the Ganesha puja samagri page.
The poet signing his own composition, in the old bhakti manner of leaving a chhap or seal in the last verse. He asks that whoever comes to Shyama for shelter finds their work fulfilled - a devotee putting his name to the prayer rather than a character in it.
