When is the Santoshi Mata Chalisa recited?
On Fridays, and particularly through the sixteen consecutive Fridays of her vrat. It is read after the puja and before the gud-chana prasad is shared.
Who is Santoshi Mata?
The goddess of santosh, contentment, worshipped as the daughter of Ganesha in a tradition that spread widely in the twentieth century. Her worship is plain by design - gud, chana, a red flower, a ghee lamp - and asks for a settled mind rather than abundance.
Why is nothing sour allowed?
Khatai is prohibited for the whole vrat day, and the household is asked not to eat or serve anything sour either - no lemon, tamarind, curd or pickle. The katha turns on this, and the tradition treats it as the test of the observance.
How is the sixteen-Friday vrat completed?
With the udyapan on the seventeenth Friday: sixteen boys are fed kheer-puri and chana with nothing sour in the meal, and dakshina given. The Santoshi Mata vrat vidhi page has the procedure.

A chalisa is a devotional hymn of forty (chalis) verses (chaupais), framed by opening and closing dohas (couplets).
