Easy & Simple No Cook Banana Sabudana Dessert for Vrat / Fasting

Sabu Makha or Banana Sabudana Dessert is a classic, no-cook comfort food traditionally prepared in Bengali households for Hindu fasting days (Vrat), Pujas or Ekadashi. It is incredibly refreshing, naturally sweet and requires absolutely no stove time.

Ingredients

  • 1/2 cup Sabudana (tapioca pearls)
  • 1 large Ripe Banana (preferably sweet varieties like Robusta or Champa)
  • 4–5 Soft Dates (Khajur), pitted and finely chopped
  • 3–4 tbsp Freshly grated coconut
  • 1/2 cup Milk (chilled or room temperature, pre-boiled)
  • A pinch of Cardamom powder (elaichi)
  • Optional: A few chopped nuts (cashews, almonds) or pomegranate arils for extra crunch

The No-Cook Method

1. Soak the Sabudana

Wash the sabudana thoroughly 3–4 times to get rid of starch. Drain completely. Add just enough water to match the level of the pearls, cover and let them soak for 2–3 hours until they are plump, soft and easily mashable between your fingers.

2. Mash the Base

In a wide mixing bowl, peel the ripe banana and slice it. Use your fingers or a fork to mash the banana into a rustic paste. (Traditionally, Makha dishes are mashed cleanly by hand to bring out the best textures.)

3. Combine the Sweets & Coconut

Add the finely chopped dates, freshly grated coconut and a pinch of cardamom powder into the mashed banana. Mix well so the dates soften slightly into the mixture.

4. Bring it Together

Add the soft, soaked sabudana to the bowl. Pour in the milk gradually while mixing everything together gently with your hand or a spoon until it reaches a thick, porridge-like consistency.

5. Garnish and Serve

Top it off with an extra sprinkle of grated coconut and a few chopped dates or nuts if you like. Your wholesome, energy-boosting Sabu Makha is ready to be served immediately!
