These No-Bake Dry Fruit & Date Ladoos are naturally sweet, packed with nutrients and act as a wonderful instant energy booster during fasting days. Because they rely completely on the natural stickiness and sweetness of dates, this recipe requires absolutely no added sugar, jaggery or cooking.
Ingredients
- 1.5 cups Soft, pitted dates (Medjool or any soft variety), finely chopped or minced
- 1/2 cup Roasted almonds
- 1/2 cup Roasted walnuts
- 1/2 cup Roasted cashews
- 1/2 cup Roasted peanuts (unsalted, skin removed)
- 1 tbsp Ghee (optional, for a rich aroma and shine)
- 1/2 tsp Cardamom powder (elaichi)
The 10-Minute Method
1. Pulse the Nuts
Add the roasted almonds, walnuts, cashews and roasted peanuts into a food processor or a dry grinder jar. Pulse a few times until they are coarsely chopped into small, crunchy bits. Do not grind them into a powder, as the textured crunch makes the ladoos taste much better. Transfer the chopped nuts to a mixing bowl.
2. Mince the Dates
Add the finely chopped, pitted dates to the same food processor. Blend or pulse until they form a thick, sticky and uniform paste. If your dates are a bit dry, you can soak them in warm water for 10 minutes, then drain them completely before blending.
3. Combine the Mixture
Transfer the minced date paste into the bowl with the coarsely chopped nuts. Add the cardamom powder and the ghee (if using). Use your hands to thoroughly knead and mix everything together until the nuts are evenly distributed throughout the sticky date dough.
4. Roll into Ladoos
Grease your palms with a tiny touch of ghee to prevent sticking. Take small portions of the mixture and press firmly between your palms, then roll them into smooth, round, bite-sized energy balls (ladoos).
Vrat Tip: Store these ladoos in an airtight container. They stay perfectly fresh at room temperature for up to two weeks and in the refrigerator for over a month, making them an excellent make-ahead snack to keep on hand throughout the fasting season!
